5 cups water
handful of thyme leaves
2 large grapefruit strips of skin
1 cup of honey
Other ingredients needed
1 cup grapefruit juice
1 cup pineapple juice
1. In a medium pot over medium-high heat, add water and let it begin to boil. Once boiling, add the thyme leaves, and strips of grapefruit skin and boil for 10 minutes. 2. After 10 minutes, turn off the heat and gently stir in the honey, cover the mixture, steep for about 25-30 minutes to ensure that the flavors are fully infused and potent. 3. Once fully steeped, remove grapefruit skins and thyme leaves, pour mixture into a medium pitcher and set aside. 4. Add sliced grapefruits and thyme leaves to inside of glass as garnish.
Rosemary Citrus Spritzer
4 (4-inch) sprigs fresh rosemary
¾ cup sugar
¼ cup honey
Rosemary And Lemon For Garnish (Optional)
Peel of thick strips of zest from 1 lemon
Juice the lemons and oranges into a liquid measuring cup – you should have about 1 cup of juice. Top off with water if necessary to make 1 cup.
Combine zest, juice, rosemary, sugar and honey in a saucepan over medium heat. Boil for 1 minute, stirring constantly to dissolve the sugars.
Remove from heat and let sit 10 minutes. Strain, discard solids and let syrup cool completely.
To serve, fill an 8-ounce glass halfway with ice cubes, add 2-3 tablespoons syrup, fill with soda water, and stir. Garnish with rosemary sprigs and/or lemon slices, if desired.
